The Torrós
Turron is a typical sweet of Spanish gastronomy that has a long history in the region. Its origins date back to medieval times and it has evolved over the centuries to become one of the most emblematic products of our land.
The history of turrón is intertwined with the history of the Arabs in the Iberian Peninsula. During the Middle Ages, the Arabs introduced sugar cane to the region, which allowed the sugar industry to develop. From this time onwards, sugar became a basic ingredient in cooking and all kinds of sweets began to be made.
Nougat, in its earliest form, consisted of a mixture of almonds and honey. Almonds were a very common product in the region, and honey was used as a natural sweetener. These ingredients were mixed and kneaded into a compact dough, which was then left to dry.
Over time, the nougat recipe was refined and new ingredients were introduced. In the 18th century, egg whites began to be used to give the dough more consistency and spices such as cinnamon and lemon zest were added to enhance the flavour. Moulds were also used to shape the nougat, which allowed for a more attractive presentation. Over the years, this sweet has spread to many regions of the world (Italy, France, North Africa and the Middle East), but it is still in Spain where the world's largest production of this sweet is concentrated.
There are several regions in Spain that produce turrón: Jijona and Biar in the Valencian Community and Agramunt in Catalonia are the main ones.
