Flower of salt and common salt (table salt) have significant differences in terms of their production process, taste and texture. Here are the main differences between the two:

Production process: Flower of salt is formed naturally on the surface of salt pans during the evaporation of seawater. It is carefully harvested by hand, selecting the thin layers that form on top of the brine. Common salt, on the other hand, is obtained through the evaporation of water from salt springs or salt mines. It is then subjected to refining processes to remove impurities and obtain uniform crystals.

Composition: Flower of salt contains a higher concentration of minerals and trace elements than common salt. This is because it is harvested from the top layer of the salt flats, where more nutrients are found. Common salt, on the other hand, undergoes refining processes that can remove some of these minerals.

Texture: Flower of salt has a lighter and more delicate texture. Its crystals are finer and more fragile, which gives it a crunchy sensation when eaten. Common salt, on the other hand, has coarser crystals and a more grainy texture.

Flavour: Flower of salt is characterized by its more intense and complex flavour. Due to its mineral content, it can have milder saline overtones and subtle notes of the sea. Common salt, in comparison, has a more standard, salty taste.

Culinary use: Flower of salt is mainly used as a finishing salt, i.e. it is added just before serving to enhance the flavour of dishes. Due to its delicate texture and distinctive taste, it is often used in gourmet dishes, salads, grilled meats and desserts. Regular salt, on the other hand, is widely used in everyday cooking for seasoning and cooking food.

In short, while flower of salt is appreciated for its intense flavour, crunchy texture and mineral richness, common salt is more common and versatile in culinary use. Both have their own characteristics and can be used according to individual preferences and needs.
